Super Healthy Italian Pasta Salad You Have to Try

I don’t know about you guys, but I just simply love pasta! Unfortunately it’s not the healthiest food to eat, but good news my dear pasta lovers, here’s a way to make it healthy! Let’s make a delicious Italian pasta salad, which can either be served as a main or as a side dish. This stuff is really awesome later on in the season when we have garden fresh tomatoes. Yummy!

Italian Pasta Salad

Ingredients:
1 12oz pkg. rotini or bowtie pasta
2-3 carrots, peeled and diced
3 green onions, sliced
2-3 celery stalks, sliced
2 tomatoes, diced
1# broccoli, chopped
1 can olives, sliced
2 Tbsp grated parmesan cheese
Italian dressing
Salt & Pepper to taste

Cook pasta in salted water. It’s important to use a large pot! Size matters. The pasta should be swimming in a sea of water because it will expand while cooking. If there is not enough water than the pasta will get mushy and sticky. For all the impatient cooks out there, just wait that extra minute until the water is boiling with big bubbles. The boiling temperature is what prevents the pasta from getting mushy. And do not forget to stir. It may sound obvious, but this simple step can easily be forgotten through everyday distractions and the rush of cooking dinner. Without stirring, the pasta will for sure stick together and cook unevenly.
When ready, rinse with cold water to cool. Stir in vegetables, olives, and parmesan cheese. Add Italian dressing and salt and pepper to taste.

Notes:
-You can add whatever veggies your family likes. If we have red or yellow peppers, I like to add those.
-I have also seen this salad served with ham, salami, pepperoni, or cheese cubes. It really is quite versatile, so give it a try!
